Many interesting teas are shaped by fire.
"Many interesting teas are shaped by fire. Lapsang Souchong is among the boldest, dried over smoldering pine in the Wuyi Mountains until it tastes like a campfire with dark stone fruit underneath. Organic Gunpowder is rolled tight and fired hard in a turning oven, and it comes out tasting like leeks pulled off a very hot grill. Wuyi Da Hong Pao is a gentler one, with its unbroken leaves roughly 40% oxidized for the warm, rich flavor of roasted peaches. All three are currently in the Sale Collection. Brew them side by side, and you can taste exactly what heat does to a leaf." —Mike
